Mix the ingredients well to make a large ball from the mixture. Make about 3 dozen small balls and flatten each into a 2-inch circle. Cover the cherries with each circle, and then lightly roll them with your hands. Now put covered cherries in refrigerator to cool.
To make the topping make the mixture of the following ingredients:
Sweet chocolate
2 tbsp. butter
2 cups semisweet chocolate chips
Paraffin wax
Melt together the above ingredients and dip these cooled cherries in this mixture. Cool again on parchment papers.
Tips:
- You can add some maple, vanilla or almond syrup to get an extra flavor.
- Store them in the refrigerator, in a covered container for 1-2 weeks before serving. It will make the outside coating firmer, but the center will be juicier.
- Drain the cherries well and do not remove the stems. Leaving them on the counter for a week helps to dry them properly.
