There Is No Such Thing as White Chocolate
What we call white chocolate, is not really chocolate at all. In fact, the U.S. Food and Drug Administration does not even recognize it as chocolate. This is probably due to the fact that it contains no chocolate.
All chocolate is made in roughly the same way. Cocoa beans are fermented, dried, and roasted. After they are roasted, the shells are removed and the beans are ground up using a heavy stone wheel that generates heat, and liquefies the beans. This thick dark liquid is called chocolate liquor. That is what makes unsweetened chocolate, in other words, it is chocolate in its purest form.
When the fat is removed from chocolate liquor, that fat is called cocoa butter. With the fat removed, the liquor is now cocoa powder. Plain chocolate is a mixture of cocoa butter, cocoa powder, chocolate liquor and sugar. The so called white variety is a mixture of cocoa butter (just the fats) milk and sugar.
